Ghoulish Snacks for Halloween

Halloween is nearly here. This week, we have some ghoulish snacks for “goblins” of every age to make and enjoy.

If you have a favorite soup or comfort food recipe that you would like to share, we would love to hear from you! Recipes, with photo (and a short story/history), if available, can be submitted to

Mango Salsa

1 mango, peeled & chopped

1/2 jalapeño pepper, minced

1/2 c. chopped tomato

1/3 c. chopped red onion

Juice of 1 lime

In medium bowl, stir mango, jalapeño, tomato, onion and lime juice until well combined. Serve with your favorite chips.

Jalapeño Popper Mummies

Jalapeño peppers, halved lengthwise, seeds and membranes removed

Cream cheese

Crescent roll dough

Small candy eyeballs

Preheat oven to 375 degrees F. Fill each jalapeño half with cream cheese. Unroll crescent roll dough and cut into thin strips. Wrap strips of dough around each pepper to resemble a mummy, leaving a space for the “eyes.” Place peppers on rimmed baking pan; transfer to oven and bake 11 to 13 minutes or until dough is golden brown. Let cool 10 minutes; arrange candy eyeballs on mummies.

Sweet and Sour Mango Dipping Sauce

1 c. chopped mango

1/4 c. water

3 T. apple cider vinegar

3 T. honey

2 T. ketchup

1 T. soy sauce

Place mango and water in blender; puree until smooth. Transfer mango mixture to medium saucepot; stir in vinegar, honey, ketchup and soy sauce. Cook over medium-high heat until thickened to a thin sauce consistency (mixture will continue to thicken as it cools), stirring occasionally.

Pumpkin Deviled Eggs

6 hard boiled eggs, halved, whites and yolks separated

3 T. mayonnaise

1 tsp. Dijon mustard

Pinch of kosher salt

Orange food coloring

Paprika & chives, for garnish

Place egg yolks, mayonnaise, mustard and salt in small bowl; stir with fork until well combined. Stir in food coloring one drop at a time or until desired orange color is achieved. Fill egg whites with yolk mixture. Use a damp finger to smooth the yolk mixture. Use a toothpick to make lines in the yolk mixture to resemble a pumpkin. Lightly sprinkle yolk mixture with paprika, and garnish with a small piece of chive to make the pumpkin “stem.”

Spider Pizzas

Frozen mini pizza bagels

Pitted black olives

Prepare mini pizza bagels according to package instructions. Use sharp knife to cut olives into “spider” parts, and arrange spiders on top of pizzas.

Apple Monsters

Green apples, quartered

Peanut butter

Pine nuts

Mango, cut into small triangles

Medium candy eyeballs

Using a sharp knife, cut a “mouth” out of each apple quarter. Fill gap with peanut butter. Press pine nuts and mango piece into peanut butter to resemble teeth and a tongue. Using a small dab of peanut butter, “glue” one or two candy eyeballs onto apple above mouth.

Halloween Monster Popcorn

1 c. popcorn kernels

1 T. vegetable or canola oil

1 package Candy Melts (your color of choice)

Eyeball Sprinkles

If popping popcorn on the stove using a Whirley-Pop®, add your vegetable oil to the bottom of the pan along with 3 popcorn kernels and heat over medium heat. After hearing the 3 kernels pop, add the 1 cup of popcorn kernels.

Continuously turn the Whirley-Pop® arm to keep the popcorn from burning. Once popping slows to an almost stop, turn off the heat and remove the popcorn popper from the stove.

Pour popcorn into a bowl.

Melt your Candy Melts according to manufacturer’s instructions.

Once Candy Melts are melted, add to the popcorn in the bowl and mix to combine.

Immediately pour candy melted popcorn onto a parchment paper covered baking sheet and top with colorful sprinkles and eyeball sprinkles. Enjoy!

Baby Spider Cupcakes

18 oz. chocolate cake mix

1 c. mayonnaise

1 c. water

3 eggs

16 oz. vanilla frosting

20 drops yellow food coloring

4 drops red food coloring

1 decorating gel (large tube black cake, with small decorating tip)

24 gum drops (large black)

24 gum drops (small black)

Chow mein noodles

Preheat oven to 350°. Line two 12-cup muffin pans with cupcake liners; set aside.

Beat cake mix, mayonnaise, water and eggs in large bowl with electric mixer on low speed 30 seconds. Beat on medium speed, scraping sides occasionally, 2 minutes. Evenly pour into prepared pans.

Bake 18 minutes or until toothpick inserted in centers comes out clean. Cool 10 minutes on wire racks; remove from pans and cool completely.

Reserve 1 tablespoon vanilla frosting. Mix food coloring into remaining frosting; frost cupcakes.

Draw 3 circles on each cupcake with black gel. Pull through 6 to 7 lines from center of each cupcake to the edge with toothpick forming a web. Insert 8 noodles for legs into large gum drops, then attach small gum drops to large gum drops with noodle for head. Use reserved vanilla frosting to draw eyes with toothpick. Arrange spiders on cupcakes.
